INGREDIENTS

  • 1 cup butter- softened
  • 1-1/2 cups granulated sugar
  • 2 eggs
  • 2 mashed bananas
  • 4 cups all-purpose flour
  • 5 tsp baking powder
  • 1 tsp salt
  • 3/4c up Milk
  • 1 tsp vanilla extract
  • 3 cups chopped apples
  • 6 tbsp sugar
  • 1 tsp cinnamon

INSTRUCTIONS

 

Step 1

Preheat oven to 400 degrees & prepare your muffin tins. Set aside.

Step 2

Cream butter & sugar in large mixer bowl.

Step 3

Add egg & bananas- mix well.

Step 4

Mix flour, baking powder & salt in small bowl. Set aside.

Step 5

Mix cinnamon & sugar in a small bowl & transfer to bowl with apples. Stir to coat apples.

Step 6

Add flour mixture & milk to butter mixture & beat on medium speed until well combined.

Step 7

Add vanilla- beat in.

Step 8

Add vanilla- beat in.

Step 9

Spoon batter into prepared muffin pans (this made 34 muffins)

Step 10

Combine additional cinnamon & sugar & sprinkle on top of each muffin before baking (optional)

Step 11

Bake for 20 minutes.

Step 12

Remove & cool on wire rack 10 minutes.

Step 13

Store in airtight container for up to 4 days.
