Pear Salsa

INGREDIENTS

  • 9 cups peeled chopped tomato (approx 10 tomatoes)
  • 6 cups peeled chopped pear (approx 7-8 pears)
  • 2 cups onion
  • 3 green peppers
  • 3 red peppers
  • Jalapeno pepper seeded and minced (optional)
  • 4 cloves of garlic, minced
  • ½ cup of sugar
  • ½ cup of vinegar
  • 1 tbsp. salt
  • 2 tsp. paprika
  • 1 tsp. oregano
  • 1 tsp. dry mustard
  • 1 tsp. red pepper flakes
  • Dash of Tabasco to taste

INSTRUCTIONS

Step 1

Add all ingredients to a large pot

Step 2

Bring to a rapid boil, reduce heat to medium high and continue to boil for 20 mins.

Step 3

Reduce heat to medium low and simmer for 1 hour until pears have softened, but still maintain their shape.

Step 4

Allow to cool and serve.
